Rhubarb Bars
Crust
1 ¾ cups flour
¼ cup sugar
¼ cup vegetable oil
3 TBSP soy milk
Topping
2 eggs plus 2 egg whites
1 ½ cups sugar
5 cups chopped rhubarb
2 TBSP chopped crystallized ginger
2 tsp vanilla
1 tsp baking powder
1 cup unsweetened coconut
½ cup chopped walnuts
Preheat oven to 350. Mix (using fork or pastry
blender); flour, ¼ cup sugar, oil, and soymilk. Press
Into bottom of 9X 13” pan. Bake 20 minutes.
While crust bakes mix topping ingredients, pour over crust and continue to bake 30-35 minutes. Cool and cut into bars.
